I love recipes like this because they prove that gluten-free food does not have to be complicated to be really satisfying.
These tacos are quick, colourful and easy to put together, with shredded chicken, sweetcorn, finely diced pepper, mild paprika, sour cream and plenty of grated cheddar tucked into warm gluten-free corn tortillas. I like to finish them with a little coriander and fresh lime, then serve them with guacamole and tomato salsa on the side.
If you are cooking for someone with coeliac disease, just make sure the tortillas, cheese or sour cream, salsa and any seasonings you use are clearly labelled gluten-free.
For me, this is exactly the kind of everyday meal gluten-free living should be about: simple, generous and something everyone at the table can enjoy.
